All applicants must take reasonable steps to either leave or regularise their stay in the UK.
Requests for "exceptional assurance" must be submitted to the Home Office with evidence showing that you have not been able to leave the UK. Evidence that you cannot leave the UK such as confirmed flight ticket, or Covid test results should be submitted.
The Home Office have confirmed that you will not be treated as an over stayer or suffer any detriment in any future immigration applications during this time.
Your current visa conditions will continue to apply if you are granted "exceptional assurance", however this does should not be treated as leave to remain in the UK.
If you are unable to leave the UK before the assurance date then you must request this once more with updated evidence of your circumstances.
If you intend to remain in the UK then you must regularise your stay and apply for the correct leave., as well as meet all the requirements of that route.
